Degumming of soybean oil by immobilized phospholipase

Abstract:The sodium alginate-chitosan immobilized phospholipase(PLA) was used for degumming of  soybean oil.Through single factor test and orthogonal test,the optimal reaction conditions were determined as follows:immobilized enzyme dosage 0.012%,initial pH5.7,reaction temperature 58℃,reaction time 4 h.Under the optimal conditions,the phosphorus content reduced to 3.85 mg/kg in degummed soybean oil.In addition,the thermal stabilities and the tolerance to the reaction conditions of immobilized PLA were enhanced,and the degumming conditions in practical production were easy to control.
